Turkey bacon with wilted spinach and organic dried cranberries.
2 slices of free-range turkey bacon, cooked and cut up
1 cup of organic spinach, wilted with hot grapeseed oil
1 Tb of organic dried cranberries
I borrow the idea to “wilt” spinach from Fields of Greens where Annie, the author, recommends quickly tossing spinach in hot oil. She adds garlic and lemon juice, which is even more amazing!
